After the divine chocolatey dessert earlier this week, I was on the look out for something extremely healthy to post next in order to balance it out a little bit … Due to certain commitments, I was unable to make something myself but knew exactly which friend to call, as there’s always something delicious cooking up in her kitchen! Her name is Hawa Farooq but I always refer to her as the ‘Kitchen Queen’ as she always has quick solutions to all problems smile emoticon … Staying true to her title, she came to my rescue this time, as she had made these incredibly healthy Lettuce Wraps! These are my favourite starters at PF Changs restaurant, but this pic has tempted me to try it out at home one of these days too! Don’t these make you feel so healthy? OMG … These brownies are to die-for!! Now that, that’s out of the way, lets start from the beginning .. lol 🙂 Today, you’re going to get two heavenly desserts combined into one … Chocolate Chip Cookie Brownies! Drooling yet? As the name suggests, the recipe involves two separate batters .. one for the choc chip cookie dough and the other for the brownies … Therefore, the best way to work with it is to work on one batter from scratch, while opting for a readymade mix for the other … Whichever way you want to do it is entirely your choice, but I chose to make the choc chip cookie dough myself and use the Duncan Hines brownie mix for the other batter … I did make one mistake along the way though … I realised the brownie pan was too small AFTER pouring the batter, so I had to transfer it into another pan which resulted in the two batters combining a bit too much and effecting the final look … although the two batters are meant to be mixed, but the cookie dough should also show on top at the time of going into the oven (as shown in the pic) … lesson learnt! As far as the taste is concerned, it was simply irresistible … the two go so well together and the choc chips added in between are just a bonus! Make sure you let the brownies cool in the tin completely before cutting into squares …. Good luck! 🙂

Vegetable Oil: 1/2 cup
Brown Sugar: 1 cup
Vanilla Essence: 1 tsp
Bicarbonate Soda: 1 tsp

Nutella Oreo Cheesecake
The beginning of a New Year means a lot of excitement and plenty of new resolutions which sadly only last until the month of January :p … so I thought I better make the most of this month and bake a ‘No Dough Pizza’ as the common words one hears these days is ‘gluten-free’,’low carb’ and ‘diabetic friendly’! Although my policy is to eat whatever you want and just work out later, not everyone follows that rule. So for the sake of public demand I decided to try out a pizza recipe that ticks all the boxes above! The plus point of this recipe is that it’s ready in a matter of minutes as it involves no dough whatsoever! It actually felt like eating a very light pizza, and I don’t know if that’s good or bad, coz it does leave you craving for more … but then I guess that’s the whole point of a ‘low carb’ diet, right? I personally prefer eating proper thick crust pizza’s, so I wouldn’t say I was a huge fan of this one, but at least I tried! So, I guess I will have to let you decide the verdict of this one by trying it out yourselves …. Curious to know what was the mysterious hidden ingredient used as the base? Keep reading ….
No Dough Pizza
Ingredients for the base:
Garlic and Herbs Cream Cheese: 8oz
Garlic Powder: 1 tsp
Black Pepper: 1/4 tsp
Parmesan Cheese: 1/4 cup
Ingredients for the topping:
Pizza Sauce: 1/2 cup
Mozarella Cheese: as required
Chopped veggies: as required
Pre-heat your oven to 180 degrees Celsius and have an 8″ springform cake tin ready.
In a bowl, whisk together all the ingredients for the base.
Spread into your greased cake tin and bake for 12 – 15 minutes or until it forms a nice golden brown colour on top.
Once the base has cooled, spread the pizza sauce over the crust. Followed by the mozzarella cheese and toppings of your choice.
Place the cake tin back in your oven and bake for another 5 – 10 minutes or until the mozzarella cheese has melted.
Congratulations! Your No Dough Pizza is ready to be served! 🙂
How’s the Monday going so far? It is a beautiful rainy day in Dubai today, that has resulted in smiles all around! Amazing how weather can actually affect one’s mood … Dubai winter is for keeps! 🙂
