The beginning of a New Year means a lot of excitement and plenty of new resolutions which sadly only last until the month of January :p … so I thought I better make the most of this month and bake a ‘No Dough Pizza’ as the common words one hears these days is ‘gluten-free’,’low carb’ and ‘diabetic friendly’! Although my policy is to eat whatever you want and just work out later, not everyone follows that rule. So for the sake of public demand I decided to try out a pizza recipe that ticks all the boxes above! The plus point of this recipe is that it’s ready in a matter of minutes as it involves no dough whatsoever! It actually felt like eating a very light pizza, and I don’t know if that’s good or bad, coz it does leave you craving for more … but then I guess that’s the whole point of a ‘low carb’ diet, right? I personally prefer eating proper thick crust pizza’s, so I wouldn’t say I was a huge fan of this one, but at least I tried! So, I guess I will have to let you decide the verdict of this one by trying it out yourselves …. Curious to know what was the mysterious hidden ingredient used as the base? Keep reading ….
Ingredients for the base:
Garlic and Herbs Cream Cheese: 8oz
Garlic Powder: 1 tsp
Black Pepper: 1/4 tsp
Parmesan Cheese: 1/4 cup
Ingredients for the topping:
Pizza Sauce: 1/2 cup
Mozarella Cheese: as required
Chopped veggies: as required
Pre-heat your oven to 180 degrees Celsius and have an 8″ springform cake tin ready.
In a bowl, whisk together all the ingredients for the base.
Spread into your greased cake tin and bake for 12 – 15 minutes or until it forms a nice golden brown colour on top.
Once the base has cooled, spread the pizza sauce over the crust. Followed by the mozzarella cheese and toppings of your choice.
Place the cake tin back in your oven and bake for another 5 – 10 minutes or until the mozzarella cheese has melted.
Congratulations! Your No Dough Pizza is ready to be served! 🙂
