It’s baking hot in Dubai these days thanks to the fast-approaching summer! So I knew my next venture had to be ice-cream related. And when I think ice-cream I automatically think brownies … So today seemed like the perfect time to put to test an interesting brownie cups idea I came across on Pinterest a few days ago … Therefore, today I have for you ‘Ice-cream in Brownie Cups’. I promise this isn’t as tricky as I thought it would be, so don’t be afraid to try it out. The trick is to form the cup shape as soon as the brownies are out of the oven and still warm. There was a point where I thought I screwed up as the brownies seemed to be stuck to the muffin tray.(although I had greased it quite well). But running a butterknife around the edges of the brownie cups seemed to do the trick and they came out of the tray quite easily after that.
I always say baking is easy, but taking pics of it is an entirely different story. Dealing with ice cream today made it even harder as I had to be real quick in getting the lighting and arrangement right. So the ice-cream scoop may not seem as perfectly rounded as it was when I brought it out in the lounge, but oh well, you get the idea! Time to go have one now before it turns into milkshake … hmmmm, now there’s another idea! I wonder if blending it with milk would end up tasting like the amazing ‘black forest’ milkshake at Johnny Rockets! I’ll leave that thought for a future failed baking experiement. In the meantime, here’s the recipe for todays brownies: Serving: makes approximately 12 brownie cups Ingredients: All Purpose Flour: 3/4 cups Baking Powder: 1/2 tsp Cocoa Powder: 3/4 cups Chocolate Chips: 1 cup Eggs (large): 2 Caster Sugar: 1 cup Brown Sugar: 1/2 cup Unsalted Butter (at room temperature): 85 grams Milk: 1/2 cup For the filling: Ice cream Chocolate Syrup Sprinkles Method: Pre-heat your oven to 180 degrees Celsius. Grease a 12-case muffin tray really well. In a bowl beat together the unsalted butter, caster sugar, brown sugar, and eggs until well-combined. In another bowl, sift and add the all purpose flour, cocoa powder, baking powder, and mix with the help of a spatula. Add the dry ingredients to the wet mixture, alternating with milk. Melt the chocolate chips in a microwave and add to the batter. Give the batter one final mix. Fill the muffin case at least 3/4 full. Bake your brownies in the pre-heated oven until a skewer inserted in the centre of the brownie comes out a little moist. As soon as the brownies are out of the oven, take an egg, and place in the centre of each brownie and press down to form the bowl shape. Please note: this step has to be done as soon as the brownies are out of the oven. Allow the brownies to then cool in the muffin tray for approximately 10 – 15 minutes. Run a butter knife around the edge of each brownie and carefully remove from the case and place on the cooling rack. Allow the brownie cups to cool completely before adding a scoop of ice cream. Decorate further with syrup and sprinkles. Congratulations! Your ice cream in brownie cups is ready to be served!
