Time to get back in shape … kinda!

Hey there! It has been way too long and you guys have probably gone skinny in my absence … time to get back in shape now with some Fudge Brownie Cupcakes with Peanut Butter frosting 😉 … Ready? Now take a deep breath … and note down the recipe 😀

Fudge Brownie Cupcakes with Peanut Butter Frosting

The original recipe belongs to ‘Sally’s Baking Addiction’ website. But I have tweaked it just a little and explained it in my own way.

Serving: 8 – 10 cupcakes

Ingredients for the cupcakes:
Unsalted Butter (melted): 113g
Light Brown Sugar: 3/4 cups
Cocoa Powder (unsweetened): 1/2 cup
All Purpose Flour: 2/3 cups
Baking Powder: 1/2 tsp
Eggs (large): 2
Vanilla Essence: 1 tbsp
Salt: 1/4 tsp

Ingredients for the Frosting: 
Unsalted Butter: 75g
Peanut Butter: 1 cup
Thick Cream: 1/3 cup
Milk: 2 tbsp
Icing Sugar: 1 cup

Method for the cupcakes:
Pre-heat your oven at 180 degrees Celsius and line your cupcake tray with cases.
In a bowl, melt the butter for approximately 1 minute. Add the light brown sugar to the butter, stir and micro again for a few more seconds. Mix until well combined.
Add the eggs and vanilla essence to the mixture and mix well.
In a separate bowl, sift,add and mix all the dry ingredients together i.e. all purpose flour, baking powder, cocoa powder, and salt.
Add the dry ingredients to the wet ingredients, and gently fold with the help of a spatula until well-combined.
Add the batter to the cupcake cases and bake in your pre-heated oven for approximately 10 minutes or until a skewer inserted in the centre comes out with a few moist crumbs.
Once the cupcakes have baked, remove them from the cupcake tray and transfer to a cooling rack until completely cooled.

Method for the frosting:
In a bowl, whisk the unsalted butter until soft and fluffy. Add the peanut butter to the bowl and continue to whisk until well-combined.
Add the icing sugar, thick cream, and a few drops of milk to the mixture and whisk until all the ingredients are well-combined and of piping consistency.
Add the frosting to a piping bag fitted with your favourite nozzle, and ice on to the cooled cupcakes.

Now that you’re brownie cupcakes have baked and been eaten too .. time to gulp down some coffee and go for a run! :p
