It’s no secret I love birthdays as it means a chance to bake and be creative! Here’s what I did for a friends birthday whose two most favourite things in the world are reading books and drinking chai! Put the two together and what do you get? Ta-daa … a book box full of goodies to enjoy with a cup of chai! Goodies include mini chocolate cupcakes and savoury biscuits 🙂 … Can’t wait to see her reaction to this … Happy Birthday Ridhima!

Marshmallow Flower Cupcakes

Hey there! It has been way too long and you guys have probably gone skinny in my absence … time to get back in shape now with some Fudge Brownie Cupcakes with Peanut Butter frosting 😉 … Ready? Now take a deep breath … and note down the recipe 😀
The original recipe belongs to ‘Sally’s Baking Addiction’ website. But I have tweaked it just a little and explained it in my own way.
Serving: 8 – 10 cupcakes
Ingredients for the cupcakes:
Unsalted Butter (melted): 113g
Light Brown Sugar: 3/4 cups
Cocoa Powder (unsweetened): 1/2 cup
All Purpose Flour: 2/3 cups
Baking Powder: 1/2 tsp
Eggs (large): 2
Vanilla Essence: 1 tbsp
Salt: 1/4 tsp
Ingredients for the Frosting:
Unsalted Butter: 75g
Peanut Butter: 1 cup
Thick Cream: 1/3 cup
Milk: 2 tbsp

Seem to have baked a lot of cupcakes over the last few days but then they are my favourite goodies to give away. The ‘Smiley Cupcakes’ were a ‘Get Well Soon’ for my neighbours little one … hope they put a smile on your face too? 🙂 The ‘Assorted Cupcakes’ were for a fitness freak friend to help her celebrate her ‘cheat day’ in style! 😀
As promised, here is a step by step tutorial on how to make Marshmallow Flower Cupcakes. Simple isn’t it? 🙂
1. Cut the marshmallows diagonally
2. Frost the cupcake
3. Start lining the marshmallows (sticky side facing up) on the outer edge of the cupcake first
4. For the inner layer, place the marshmallow between 2 marshmallows of the outer layer
5. Sprinkle glitter or edible beads on top

As Dubai weather continues to play games with us (sometimes hot, sometimes cold), thought it was time to bake something similar! So what you think looks like ice cream is actually cupcakes with frosting made to look like an ice cream cone! Pretty cool idea eh?
This is a great baking activity to get your kids involved in before hols end. Place ice cream cones in a muffin tray. Pour the cupcake batter a lil more than half full (don’t get carried away as it will overflow then). Bake in your pre-heated oven at 175 degrees for 12-15 mins. Once baked, make a small slit at the base of the cone to let the steam escape. This will prevent your cone from going soggy. Once cooled, add frosting or topping of your choice!
