Don’t feel like cooking today? That sounds like me most of the time 😀 .. Actually it’s not the cooking I have a problem with .. it’s more the thought of ‘what’ to cook that is the real dilemma. This simple to make Chicken Steak recipe came to my rescue yesterday and seemed like the perfect treat to end the weekend. The ingredients required are very basic, and the whole dish can be prepared in a matter of 10 minutes! I’ve added the quantities according to my own taste, but feel free to add or deduct according to your own taste buds ….. Chicken Steak with Salad
Ingredients for the Chicken Steak:
Chicken Fillets (flattened): 2
All Purpose Flour: 2 cups
Salt: 1 tsp
Black Pepper: to taste
Paprika: 3/4 tsps
Whole Milk: 1 cup
Butter: 1 tbsp
Ingredients for the White Sauce:
All Purpose Flour: 1/3 cup
Milk: 3 cups
Salt: 1/2 tsp
Black Pepper: to taste
Paprika: 1/2 tsp
Method for the Chicken Steak :
Line up 2 bowls containing the following:
Bowl 1: Flour,salt,black pepper and paprika mixture
Bowl 2: Milk and Egg
Now take the flattened chicken fillets and season on both sides with salt and black pepper.
Then dip the chicken steak (one at a time) in ‘Bowl 1’ first, then in ‘Bowl 2’, and then back again in ‘Bowl 1’. Set aside.
Heat oil in your frying pan, and add the butter. Cook the Chicken Steak on both sides until it forms a nice golden brown colour.
Method for the gravy:
Heat a little oil, and add the flour. Keep mixing allowing it to cook until it forms a light golden brown paste. Add the milk followed by the salt, black pepper and paprika. Continue to cook until it reaches the desired consistency. ps: if it gets too thick, then add more milk to make it thinner. Pour over the chicken steak at the time of serving!
If you’re anything like me and prefer simple recipes for dinner, then this Spiced Chicken Roast recipe is for you! This was dinner last night accompanied with some roasted potatoes, cous cous salad and bread. Perfect for all you busy bees out there as it’s just a case of marinating a day before and shoving in the oven 2 hours before din din the next day … I personally thought the ingredients and amounts mentioned were just right (am not a fan of very spicy food) but by all means spice it up or less according to your own taste buds …
Spiced Chicken Roast
Chicken (with skin) – 1 kilo
Cayenne Pepper – 1tsp
Paprika – 1 tsp
Salt – 1tsp
Dried Thyme – 1tsp
Garlic Powder -1tsp
Black Pepper – 1 tsp
Lemon (sliced) – half
Olive Oil – to drizzle
Before you start, dab the chicken with tissue to make sure it is dry.
In a bowl, mix together all the ingredients except olive oil and lemon.
Drizzle a little olive oil over the chicken.
Now add the spices to the chicken amd spread well with your hands making sure all of the chicken is well marinated.
Place the lemon inside the chicken cavity.
Allow the chicken to marinate overnight or at least for a few hours.
Pre-heat your oven to 190 degrees Celsius.
Place the chicken to your baking tray and allow to cook for at least an hour and 30 minutes (or more depending on your oven).
Allow the chicken roast to cool for approximately 10 minutes after taking it out of the oven.
Mmmmm! Made these simple chicken fajita sandwiches for dinner today … a much healthier alternative to a takeaway. Love simple recipes that are easy to put together 🙂 … time to put my feet up, relax and go through fellow bloggers posts to see what scrumptious stuff they have been up to today!

And this, friends is my idea of a reward for going to the gym for a week! Haha .. It was sadly not followed by any dessert later though .. *sniff sniff* .. Jokes aside, tried a new recipe for fried chicken last night which both, my husband and I really liked, so thought it was worth a share! Loved the fact that the chicken was skinless yet still full of flavour … Plus, the recipe actually asked for the chicken to be deep fried but I chose to shallow fry and it did not affect the result. A must try, if you haven’t decided what to cook for dinner tonight …
Chicken (without skin): 1 kilo cut into 16 pieces
Salt: 1 tsp
Red Chilli Powder: 1 and 1/2 tsp (you can add a bit more if you want to make it more spicy)
Ginger & Garlic Paste: 1 tsp
Vinegar: 2 tbsp
Crushed corriander seeds: 1 tbsp
Crushed cumin seeds: 1 tsp
Gram Flour: 5 tbsp
Water: 1 cup
Bread crumbs: as required
Boil the chicken in 1 cup of water and set aside. Do not throw away the water as it can be used in making the paste.
In a separate bowl, add and mix the salt, red chilli powder, ginger & garlic paste, vinegar, coriander seeds, cumin seeds, gram flour and egg. You can add a little water if necessary to make a smooth paste.
Marinate the boiled chicken pieces in the paste for at least 30 minutes or longer.
Dip the chicken pieces in bread crumbs and fry until a nice golden brown in colour.
Time to share a quick dinner recipe now, before the weekend is over and we face the dreading task of what to wear to work tomorrow! So today, I have for you Chicken Pasta with veggies! It’s pretty simple to prepare and more or less a case of tossing chicken with your fave veggies! Recipe added below but I have not mentioned the quantity as that is pretty much down to your taste. But basic method I use has been explained…
Boil water (enough to cover the pasta shells) with a few drops of oil and salt. When water starts to boil, add the pasta shells and let it boil. When the pasta shells have softened, drain them out in a strainer and run cold water over it. Doing so, will also prevent the pasta shells from sticking.
Meanwhile, in a wok heat a little oil,add and sautee your choice of veggies (I used green pepper, mushrooms,onions and sweet corn). Add the chicken strips and season with salt, black pepper and ginger garlic paste. When the chicken has cooked a lil, add bolognese sauce (or any pasta sauce of your choice). Toss and turn to make sure sauce mixes well with the other ingredients. Add the boiled pasta shells to the dish and mix well…. Ta daa! Your chicken pasta with veggies is ready! Garnish with herbs before serving. 🙂
Anyone in the mood for some Chicken Broast with Garlic dip today? This is one of my all-time favourite recipes and is quite popular amongst family and friends .. So how could I not share the recipe with my Bakealogians (Did I just call you that?)? 🙂 … While I prefer having the chicken broast with ketchup, my husband insists it is in fact the Garlic dip that really compliments the whole dish! Will let you be the judge of that though … Either way,the good news is the dip is fairly easy to make, so can’t complain much (although boiling that one small potato can seem so tedious when it has been a long and tiring day!) … Chicken broast tastes best when served warm, and as mine is turning cold by the minute, better sign off now …
Chicken Broast with Garlic Dip
Recipe as follows:
Ingredients for the chicken broast:
Chicken: 1 kg cut in 8 pieces (with skin)
Lemon Juice: 2 tbsp
Salt: 2 tsp
All Purpose Flour: 1 cup
Paprika: 1 tsp
Mustard powder: 1/2 tsp
Cinnamon powder: 1/2 tsp
Milk: 2-3 tbsp
In one bowl, add the chicken pieces, lemon juice and 1 tsp of salt. Mix well and set aside.
In another bowl, add and mix the flour, salt (1 tsp),paprika,mustard powder,and cinnamon powder.
In a third bowl, add and whisk the egg and milk.
Dip the chicken pieces one by one in the egg mixture first, followed by the flour mixture. Refrigerate until it’s time for dinner.
Heat oil in a wok. Dip each chicken piece in the flour mixture again (tap on the sides to remove excess of flour) and add to the oil. Deep fry until the chicken is tender and golden brown.
Serve with fries!
Ingredients for the Dip:
Yogurt: 1/2 cup
Small potato (boiled): 1
Garlic: 2 cloves
Green Chilli: 2 (optional)
Mayonnaise: 1 tbsp
Add all the ingredients in a blender and mix until well-combined. Serve with the chicken broast!
After the divine chocolatey dessert earlier this week, I was on the look out for something extremely healthy to post next in order to balance it out a little bit … Due to certain commitments, I was unable to make something myself but knew exactly which friend to call, as there’s always something delicious cooking up in her kitchen! Her name is Hawa Farooq but I always refer to her as the ‘Kitchen Queen’ as she always has quick solutions to all problems smile emoticon … Staying true to her title, she came to my rescue this time, as she had made these incredibly healthy Lettuce Wraps! These are my favourite starters at PF Changs restaurant, but this pic has tempted me to try it out at home one of these days too! Don’t these make you feel so healthy?
