We are just a few hours away from weekend in Dubai … I’ve been looking forward to this one, as it’s the Dubai Bake Festival tomorrow .. woohoo! Weekend always means getting to spoil yourselves a bit more by baking up a divine weekend treat such as this one .. baked French Toast! Can easily be prepared a night in advance, so all you really have to do tomorrow morning is to pop them in the oven and get a few more mins to relax! The key to this recipe is the type of bread you use. The first time I baked this, I used normal sliced bread and did it exactly the way the recipe mentions. Tasted good. But the second time around, I baked it using much thicker bread (Bread roll to be precise), and just added roughly chopped pieces of it in individual ramekins. Tasted even better! My advice to you would be, if you’re baking it for the first time, then make it in a bigger dish as it gives you a better idea of how much of the ingredients to use for a smaller portion. Either way, wait until you taste the divine caramel sauce right at the base … Mmm mmm!
Unsalted butter (melted): 1/2 cup
Brown sugar: 1 cup + more to sprinkle
Thick bread: 1 Loaf or as required
Milk: 1 and 1/2 cup
Vanilla Essence: 1 tsp
Icing Sugar: 1 tbsp + more to sprinkle
Cinnamon Powder: to sprinkle
Melt the unsalted butter, and mix with the brown sugar. Spread this mixture at the bottom of a 9 x 13 oven-proof pan.
In a bowl, beat together the eggs, milk and vanilla. Add 1 tbsp of icing sugar to it and mix.
Add a layer of bread slices to the pan. Pour half of the egg mixture on top. Sprinkle some brown sugar and cinnamon powder on top of this layer.
Add the second layer of bread slices. Pour the remaining egg mixture on top.
Cover your baking dish with cling film and refrigerate overnight.
Pre-heat your oven to 180 degrees Celsius and bake the french toast for at least 45 minutes. Keep the dish covered with foil for the first 30 minutes. Remove the foil for the remaining 10 minutes or until completely baked.
Note: it does fluff up quite a bit towards the last 10 mins of baking, but don’t worry, it will level up again as it cools down.

All Purpose Flour: 1 cup
Brown Sugar: 2 tbsp
Salt: 1/4 tsp
Unsalted Butter: 1/2 cup or 113 grams
Vanilla Essence: 1/2 tsp
Eggs (at room temperature): 3
For the coating:
Cinnamon: 1 tsp
White Sugar: 1/4 cup

Semi-sweet chocolate chips: 180 grams

What you’re staring at right now is a chocolate chip cookie that was ready in less than 1 minute! I kid you not, this is one of those microwavable chocolate chip cookie desserts that seems to be the latest trend in the world of baking these days. Although I have never been a fan of cooking/baking in a microwave, but I was willing to make an exception after watching it on the Cupcakes, Cookies & Cardio channel on youtube as it just looked so easy yet divine! Result? Not only is this recipe the perfect quick fix for those dessert cravings at odd hours, but the fact it is a single serving seems like the perfect solution for someone like me who can’t keep too much of junk food around the house as I end up eating it all! There are a lot of variations one can make with this, such as using m&m’s (as was done in the original recipe), or if you’re feeling really naughty, maybe you can even top it up with a scoop of ice-cream too! By the way, this dessert is best eaten right away to enjoy the chewy texture of the cookie, as it would only harden over time! So I would not recommend you to make this in advance. There can’t possibly be a better way to satisfy those sweet cravings …. so far! Might have to make myself another one as I watch the Season 2 finale of Silicon Valley tonight … anyone else addicted to it like me?
Recipe as follows:
Unsalted butter (at room temperature): 1 tbsp
Caster Sugar: 1 tbsp
Dark Brown Sugar: 1 tbsp
Egg Yolk: 1
Vanilla Essence: 1 tsp
All Purpose Flour: 3 tbsp
Chocolate chips: 1 tbsp or as required
– In a mug or small microwavable bowl (the cookie dough will rise slightly during baking so make sure there is enough space on top of the bowl), cream together the unsalted butter, caster sugar, and dark brown sugar.
– Add the egg yolk, followed by vanilla essence.
– Add the all purpose flour one tablespoon at a time.
– Stir in the chocolate chips.
– Microwave the chocolate chip cookie, for approximately 30 seconds. If it still looks slightly wobbly, then microwave it for 10 more seconds. Remember not to overcook, as that would only dry out the cookie a lot more.
– Pour some more chocolate chips over the cookie while it is still hot so the chocolate melts a little making it even more delicious!
Just finished having iftar in Dubai a while back, and though posting a recipe on Facebook right after is the last thing on my mind, but this scrumptious baked Apple Crumble dessert deserved a special mention! So if you’re looking for an alternative to fruit salad, then you should definitely try this out … Gotta scoot now, as my chai (tea) awaits! :D…
ps: found the original recipe on a site called ‘Cook n Share’ but I have tweaked it a little bit to suit my own taste ….
Ingredients for the apple mixture:
Green Apples (cored, peeled and cut into small cubes)
Water: 2 tbsp
Light brown sugar: 1/4 cup
Cinnamon powder: 1/2 tsp
Ingredients for the crumble:
Oats: 1/4 cup
All Purpose Flour: 1/4 cup
Light brown sugar: 1/4 cup
Unsalted butter (cubed): 2 tbsp
Cinnamon Powder: 1/2 tsp
In a saucepan, add the green apples (peeled,cored and cubed), light brown sugar, water, and cinnamon powder. Let it cook on low heat until the apples have softened a little bit.
While the apples are cooking, in a bowl, combine the oats, all purpose flour, light brown sugar, and cinnamon powder and mix. Add the unsalted butter (cubed) at the end and continue to mix until it starts to crumble up.
Add the cooked apples to the ramekin and top it up with the crumble mixture.
Bake in your pre-heated oven at 180 degrees Celsius for approximately 10 minutes, or until it is light golden brown in colour.
It’s Ramadan time in Dubai … so Ramadan Kareem to everyone celebrating this blessed month! I know I’m just a tad late in wishing, but figured I’d post something a few days later as that’s when most of us are tired of the samosa and pakora’s and looking for something new to try out for Iftar!
So today I have for you an unusual but refreshing dessert .. Baked Yogurt Pudding! I first came across this dessert at a restaurant a few months ago, and was surprised by how good it tasted. So decided to try it out myself today. All you need are 3-4 ingredients and ramekins to prepare this one. Gotta love such simple recipes …. Ready?
Greek Yogurt: 1 cup
Condensed Milk: 1/2 cup
Cream: 3/4 cup (the recipe did say full fat milk can be used instead, but I tried it with cream though).
Vanilla Essence: 1 tsp
Preheat your oven to 180 degrees Celsius.
In a bowl, combine all the above ingredients until mixed.
Pour equally into ramekins and bake in your pre-heated oven at 180 degrees for approximately 10 mins or until set. Ps: the yogurt will set further as it cools down.
Garnish with chopped nuts.
Best serve chilled and in small portions!

Have visitors over this week, and how can someone not get a taste of dessert while visiting The Bakealogue right? 🙂 So although the plan was to bake a cheesecake, I changed my mind halfway through and decided to make it as individual desserts! Not only does it look different, but my main aim was to make it finish quicker *evil laugh* … I would not call it a very sweet dessert (as it may look that way) thanks to the plain cream cheese portion mixed with a little lemon juice which balances it out perfectly (don’t go ewwww, try it!!) .. These have now gone into the fridge to chill overnight … oh it’s gonna be a loooong night alrite! Lol ….
